2 tablespoons olive oil 25 g/1 oz butter
100 g/3 1⁄2oz smoked pancetta, cut into strips 4 eggs • salt and pepper
grilled tomatoes, to serve


1.Heat the olive oil and butter in a frying pan, add the pancetta andcook for 5 minutes until tender, tl1en remove and drain on kitchenpaper.
2.Break the eggs into the pan, one at atime, and season with salt and pepper. Using a wooden spoon, flip the eggwhites over the yolks to cover.
3.When the whites are set, remove the eggs from the pan using a fish slice and arrange on awarmserving dish. Surround with the pancetta and serve with grilled tomatoes.
