2 russet apples, peeled, cored and thinly sliced
25 g/1 oz butter
juice of 1 lemon, strained
3 tablespoons double cream
1 tablespoon grated horseradish
salt and pepper


1.Pour water into a medium saucepan to a depth of 2 cm/ 1inch.
2.Add the apples, cover and cook over a medium heat, stirring occasionally with a wooden spoon, for about 15 minutes until very soft.
3.Gently stir in the butter, lemon juice and cream and season with salt and pepper.
4. Finally, stir in the grated horseradish, then serve.
5.For pork, goose or duck.
