
juice of 2 lemons, strained 8 globe artichokes, trimmed | |
2 yellow peppers, halved, de-seeded and chopped 1 sprig fresh flat-leaf parsley, chopped | |
olive oil. for drizzling salt and pepper mushrooms in oil, togarnish(optional) |
1. | juice and a pinch of salt, then add the artichokes and cook for 30 minutes. Drain and leave to cool. Mix together the peppers and parsley in a bowl and drizzle with olive oil. |
2. | Stuff the artichokes with the pepper mixture, arrange on a dish, sprinkle with the remaining lemon juice andseasonwith salt and pepper. Garnish with mushrooms in oil if you like. |
