juice of 1⁄2 lemon , strained 8 globe artichokes , trimmed and cut into wedges 3 tablespoons olive oil
2 cloves garlic 1 sprig fresh flat-leaf parsley, chopped 100 g/3 1⁄2oz pecorino cheese, shaved
65 g/21⁄2oz breadcrumbs • salt


1.Half-fill a bowl with water, stir in the lemon juice, add the artichokes and leave to soak for 10 minutes.
2.Heat the olive oil in a saucepan, add the garlic and cook over a low heat for 2 minutes, then remove and discard .
3.Drain the artichokes and addto the pan,season withsalt,cover and cook over alow heat for 30 minutes.
4.If necessary, add a little hot water. Arrange the artichokes on a warm serving dish and sprinkle with the parsley , pecorino and breadcrumbs. Mix well and serve.
