2 quantity Mayonnaise
1 tablespoon chopped fresh flat-leaf parsley
dash of Worcestershire sauce
4 white bread slices, crusts removed
½ avocado
juice of 1 lemon, strained
8 cherry tomatoes


1.Mix 2 tablespoons of the mayonnaise with the parsley and Worcestershire sauce.
2.Cut the bread slices in half and spread with the remaining mayonnaise. Peel, halve and stone the avocado, then .cut into slices crossways.
3.Sprinkle with the lemon juice to prevent discoloration. Cut a cross in each tomato without cutting all the way through and open it out like a star.
4.Put a tomato in the middle of each piece of bread and garnish with the parsley, mayonnaise and avocado.
