3 tablespoons double cream
2 tablespoons tomato ketchup
2 tablespoons lime juice, strained
2 tablespoons Worcestershire sauce
dash of Tabasco sauce
1 quantity Mayonnaise
1 avocado
lime slices, to garnish


1.Stir the cream, ketchup, lime juice, Worcestershire sauce and a dash of Tabasco into the mayonnaise and season with salt to taste.
2. Peel and halve the avocado and remove the stone.
3.Cut into wedges, then slice thinly. Add to the mayonnaise and mix gently.
4.Spoon into a sauce boat and garnish with slices of lime.
5.For prawns, chicken and rice or poached eggs.
