juice of 1 lemon, strained 2 tangerines 1 Cos lettuce, trimmed 2 tomatoes, sliced
1 spring onion, sliced 2 sprigs fresll flat-leaf parsley, chopped 2 teaspoons Dijon mustard
6 tablespoons olive oil salt and pepper


1.Peel, halve and stone the avocados, then cut into slices and sprinkle with the lemon juice. Peel the tangerines, cut away all traces of pith and slice horizontally.
2.Arrange a bed of lettuce leaves on each of four plates. Make a layer with the tomatoes and spring onion, then arrange a ring of avocado slices, top with the tangerine slices and sprinkle with the parsley.
3.Mix together the mustard and olive oil in a bowl, season with salt and pepper, pour thedressing over the salad and serve.
