
4 tablespoons olive oil 1 clove garlic | |
600 g/1 lb 5 oz baby onions, thinly sliced 6 eggs | |
40 g/1 1⁄2 oz freshly grated Parmesan cheese | |
1 sprig fresh flat-leaf parsley, chopped salt and pepper home-made bread, to serve |
1. | Heat the olive oil in a frying pan, add the garlic and cook for a few minutes until browned, then remove and discard it. |
2. | Add the onions to the pan and cook over a low heat, stirring occasionally, for 5 minutes. Beat the eggs with the Parmesan and parsley in a bowl and season with salt and pepper. |
3. | Pour the mixture into the pan and cook, stirring occasionally witl1 afork,until the eggs are lightly set. Transfer to a warm serving dish and serve with home-made bread. |
