1 tablespoon olive oil 50 g/2 oz pancetta, chopped
500 g/1 lb 2 oz baby onions 5 fresh sage leaves salt


1.Heat the olive oil in a pan, add the pancetta and cook, stirring occasionally, for 5 minutes.
2.Add the onions and sage, season with salt and cook over a high heat until lightly browned all over.
3. Reduce the heat, add 5 tablespoons water, cover and cook for about 30 minutes.
