100 g/3½ oz butter, diced
1 large bunch fresh basil, leaves torn into pieces
2-3 tablespoons lemon juice, strained
salt and pepper


1.Place the butter in the top of a double boiler or in a heatproof bowl and melt over barely simmering water.
2.Remove the saucepan from the heat, whisk in the basil and lemon juice and season with salt and pepper.
3.For fish or shellfish.
