1 skinless, boneless chicken breast 400 g/14 oz cooked, peeled prawns
1 celery stick, sliced 400 g/14 oz beansprouts 1 tablespoon sesame seeds
1 spring onion, green part only, chopped· 5 tablespoons dark soy sauce 2 teaspoons sesame oil salt


1.Poach the chicken in lightly salted, simmering water for about , 25 minutes until cooked through. Drain and thinly slice.
2.Arrange the chicken, slices, prawns, celery and beansprouts on afairly shallow serving dish and sprinkle with the sesame seeds and spring onion.
3.Mix together the soy sauce and sesame oil in a bowl and season lightly with salt if necessary. Pour the dressing over the salad and serve immediately.
