25g/1 oz butter, melted, plus extra for greasing
600 g/1 lb 5 oz cooked beetroot, peeled and cut into 5-mm/1⁄4-inch thick slices
300 ml/1⁄2 pint Bechamel Sauce salt


1.Preheat the oven to 180°C/350°F/Gas Mark 4. Grease an ovenproof dish with butter. Arrange the beetroot slicesinthe prepared dish and drizzle with the melted butter.
2.Season with salt, spoon the bechamel sauce over the beetroot and bakeuntil hot and bubbling. Serve immediately.
