Ingredients

1 tablespoon sunflower margarine, plus extra for greasing
75 g (3 oz) reduced-fat digestive biscuits, finely crushed
300 g (10 oz) extra-light soft cheese
175 ml (6 fl oz) 0% fat Greek yogurt
1 tablespoon cornflour
finely grated rind and juice of ½ lime
1 teaspoon vanilla extract
3 tablespoons granular sweetener
3 tablespoons caster sugar
125 g (4 oz) blueberries
2 passion fruits, halved

Instructions

1.Freheat the slow cooker if necessary, Grease the base and sides of a 15 cm (6 inch) round ovenproof dish, about 6 cm (2% inches) deep, with a little margarine and base-line with a circle of nonstick baking paper.
2.Melt the margarine in a small saucepan and stir in the crushed biscuits.
3.Spoon into the dish and press down firmly to make a thin, even layer.
4. Place the cheese, yogurt and comflour in a mixing bowl and whisk until smooth.
5.Add the lime rind and juice, vanilla, sweetener, sugar and eggs and whisk again until smooth.
6.Pour the mixture into the dish and smooth the surface. Cover with greased foil and put in the slow cooker pot.
7.Pour boiling water into the slow cooker pot to come halfway up the sides of the dish, cover and cook on high for 2 hours or until the cheesecake is set but with a slight wobble in the canme.
8.Lift tbe dish out of the slow cooker pot using a tea towel and leave o cool, then chill in the refrigerator for 3-4 hours or overnight.
9.Loosen the edge of the cheesecake with a knife, turn out of the dish and peel away the lining paper.
10. Place on a serving plate, pile the blueberties on top, then scoop the passion fruit seeds out of the halved fruits with a teaspoon over them. Serve cut into wedges.
11.FOR SUMMER BERRY CHEESECAKE, follow the recipe above to make the cheesecake, using the grated rind and juice of lemon instead of the lime.
12.Gendy toss 100 g (3½ oz) hulled, sliced strawberries and 100 g h oz) raspberies with 2 tablespoons reduced-sugar strawberry jam and 1 tablespoon lemon juice instead of the blueberries and passion fruits.
13.Tum out the cheesecake and top with the berry mixture just before serving.
