olive oil, for brushing
500 g/1 lb 2 oz boiled beef, chopped
3 eggs juice of 1 lemon, strained
salt and pepper


1.Brush a flameproof glass or earthenware dish with olive oil and add the beef.
2.Beat the eggs with the lemon juice and salt and pepper to taste.
3.Place the dish over a low heat, pour in the egg mixture and mix quickly so that the beef is coated.
4.Cook for 2 minutes, then remove from the heat and serve hot.
