2 day-old bread slices, crusts removed 200 ml/7 fl oz milk• 6 eggs
2 tablespoons freshly grated Parmesan cheese 1 tablespoon chopped fresh flat-leaf parsley
2 tablespoons olive oil 25g/1 oz butter• salt and pepper


1.Tear the bread into pieces, place in a bowl, add the milk and leave to soak for 10 minutes, then squeeze out.
2.Lightly beat the eggs, stir in the bread, Parmesan and parsley and season with saltand pepper.
3.Mix until the bread softens and is incorporated.
4. Heat the ol ive oil and butter in a frying pan, pour in the mixture andcook until browned on both sides. This frittata has asimple but delicate taste.
