
2 day-old bread slices, crusts removed 200 ml/7 fl oz milk• 6 eggs | |
2 tablespoons freshly grated Parmesan cheese 1 tablespoon chopped fresh flat-leaf parsley | |
2 tablespoons olive oil 25g/1 oz butter• salt and pepper |
1. | Tear the bread into pieces, place in a bowl, add the milk and leave to soak for 10 minutes, then squeeze out. |
2. | Lightly beat the eggs, stir in the bread, Parmesan and parsley and season with saltand pepper. |
3. | Mix until the bread softens and is incorporated. |
4. | Heat the ol ive oil and butter in a frying pan, pour in the mixture andcook until browned on both sides. This frittata has asimple but delicate taste. |
