100 g/3 1⁄2 oz cooked ham, diced 1 onion, chopped 1 carrot, chopped
200 ml/ 7 fl oz Meat Stock
1 sprig fresh flat-leaf parsley, chopped salt and pepper
2 kg/4 1⁄2lb fresh broad beans, shelled 40 g/1 1⁄2oz butter


1.Put the beans in a saucepan, add cold water to cover bring to the boil and cook for 10 minutes.
2.Meanwhile, melt half the butter in another pan, add the ham, onion and carrot and cook, stirring occasionally, for 5 minutes.
3.Drain the beans and add to the ham mixture, then pour in the stock and season with salt and pepper. Simmer until the sauce is very thick, then stir in the remaining butter, transfer to a warm serving dish and sprinkle with the parsley.
