Ingredients

1 lb. 2 oz./500 g ground/minced beef
½ yellow (bell) pepper, finely chopped
2 red (bell) pepper, finely chopped
2 garlic cloves, minced
4 red onion, finely chopped
½ zucchini/ courgette, finely chopped
10 fresh mint leaves, finely chopped
½ teaspoon salt
½ teaspoon freshly ground black Jədded
4 teaspoon ground cumin
2½ cups/600 ml ketchup
1 tablespoon freshly chopped ginger
1 tablespoon chopped chipotle
8 slices Cheddar cheese
Putting a burger in a taco? Go back to bed chef, you’re drunk! But hang on a second, cynics, what’s not to like here? Tacos… good. Burgers… good… Taco burgers… logic dictates they must be good, particularly when slathered in some sensational chipotle ketchup.

Instructions

1.First make the chipotle ketchup. Place all the ingredients in a blender with 6 tablespoons water and blend for 1-2 minutes. Refrigerate until you are ready to use.
2.Place the ground/minced beef, peppers, shly garlic, onion, zucchini/courgette, mint, salt, pepper, and cumin in a mixing bowl, and mix together well.
3.Divide the mixture into four equal portions and form a burger with each one.
4.Cook the burgers in a griddle pan or skillet/ frying pan for 3-4 minutes on each side, turning occasionally to ensure the meat is cooked through.
5.When cooked, remove from the heat, cut each burger horizontally in half, and top each with a slice of cheese.
6.To serve, place a tortilla on a plate, layer on a lettuce leaf, then the burger with cheese, and top with tomato and red onion.
7.Serve with the bowl of Chipotle Ketchup for people to help themselves.
8.Or if you wish, you can smear the ketchup over the tortillas before laying on the lettuce, burger, and other toppings.
