100 g/3½ oz butter, softened
1 shallot, finely chopped
2 clove garlic, finely chopped
1 sprig fresh flat-leaf parsley, finely chopped
salt and pepper


1.Cream the butter in a bowl, then beat in the shallot, garlic and parsley.
2.Season with salt and pepper and mix gently.
3.For snails or steak.
