1 carrot
1/2 green apple, cored
juice of 2 lemon, strained
4 white bread slices, crusts removed
2 tablespoons chopped fresh flat-leaf parsley
50 g/2 oz pickies, chopped
1/2 quantity Mayonnaise


1.Cut the carrot and apple into thin batons, mix together and sprinkle with the lemon juice to prevent the apple from going brown.
2.Cut the bread slices in half. Mix together the parsley, pickles and mayonnaise, then spread the mixture on the bread.
3.Place a little carrot and apple in the middle of each half-slice.
