
1x1-kg/2 1⁄4-lb cauliflower, cut into florets | |
1 teaspoon plain flour 250 g/9 oz strong Gorgonzola cheese, diced | |
00 ml/3 1⁄2 fl oz milk 25 g/1 oz butter, softened | |
2 tablespoons brandy 1 tablespoon cumin seeds salt and pepper |
1. | Put the cauliflower in a saucepan, add cold water, the flour and a pinch of salt and bring to the boil, then simmer for 15 minutesuntil just tender. |
2. | Drain and place on a warm serving dish. Meanwhile, put the Gorgonzola, milk, butter and brandy in afood processor, add salt and pepper to taste and process until smooth and combined. |
3. | Spoon the mixture over the cauliflower, sprinkle with the cumin seeds and serve immediately. |
