1x1-kg/2 1⁄4-lb cauliflower, cut into florets
1 teaspoon plain flour 250 g/9 oz strong Gorgonzola cheese, diced
00 ml/3 1⁄2 fl oz milk 25 g/1 oz butter, softened
2 tablespoons brandy 1 tablespoon cumin seeds salt and pepper


1.Put the cauliflower in a saucepan, add cold water, the flour and a pinch of salt and bring to the boil, then simmer for 15 minutesuntil just tender.
2.Drain and place on a warm serving dish. Meanwhile, put the Gorgonzola, milk, butter and brandy in afood processor, add salt and pepper to taste and process until smooth and combined.
3.Spoon the mixture over the cauliflower, sprinkle with the cumin seeds and serve immediately.
