1 chicken, breast, fillet
1 tablespoon(s) olive oil
2 sprig(s) rosemary
2 clove(s) of garlic
For the dressing
100 g strained yogurt
1-2 tablespoon(s) honey
zest, of 2 lime
For the salad
lola rosa lettuce, red
10 lettuce leaves
10 g tomato


1.Preheat oven over 180°C (355* F) Set to Fan.
2.Heat a plan over high heat.
3.Place the chicken fillet on a cutting board and cut it in half horizontally to create 2 thinner fillets.
4.Season the chicken with salt and pepper and add olive oil. Add to the pan. Sauté for 2-3 minutes on each side until golden.
5.Transfer pan to the oven and bake for 7 minutes.
6.For the dressing
7.Place all of the ingredients in a bowl and mix.
8.Set aside.
9.For the salad
10.Coarsely chop the salad with your hands and place it in a bowl.
11.Cut the cherry tomatoes in half and add them to the same bowl.
12.Add 2-3 tablespoons dressing and mix.
13.Remove chicken from oven, cut it into thin slices and add it to the salad bowl.
14.Serve with fresh thyme and mint.
