5-6 pears, medium, peeled and cored, cut in half
1 1/2 kilo chicken
2 onions, roughly chopped
4 clove(s) of garlic, peeled and whole
100 g apple cider vinegar
160 g grape molasses
5-6 sage leaves
2 tablespoon(s) tomato paste
150 g olive oil
1 liter water


1.Heat a wide pot until it gets very hot. Add some olive oil and brown the chicken on all sides.
2.If your pot is too small, brown the chicken in batches. Do not crowd the pot.
3.Remove the chicken from the pot. Add the pears and sauté them until they turn golden and caramelize.
4.Remove the pears from the pot. Add the onions and sauté them until they turn golden and soften. You don’t want them to turn brown or burn.
5.Add the garlic, sage and tomato paste. Cook for 2 minutes.
6.Put the chicken back in the pot and add enough water to cover the food.
7.Simmer until the chicken cooks through. Add the pears, vinegar and grape molasses 15 minutes before it is done.
8.Add more water if necessary. You want to have a nice thick and rich sauce.
