4 chicory heads, trimmed 4 large slices Prague ham or other smoked ham
250 ml/8 fl oz Bechamel Sauce pinch of freshly grated nutmeg
150 ml/1⁄4 pint Meat Stock 4 tablespoons freshly grated Parmesan cheese
salt and pepper


1.Preheat the oven to 180°C/350°F/Gas Mark 4. Grease an ovenproof dish with butter. Wrap each head of chicory inaslice of ham and place in the prepared dish.
2.Season with salt and pepper, spoon in the bechamel sauce and sprinkle with the nutmeg.
3.Add the stock and sprinkle with the Parmesan. Bake for 15 minutes. Remove the dish from the oven, leave to stand for 5 minutes and serve.
