
210 g all-purpose flour | |

1 tablespoon(s) cinnamon | |
120 g butter | |
90 g granulated sugar | |
120 g brown sugar | |
1 tablespoon(s) vanilla extract | |
1 egg, medium | |
1 pinch salt | |
For the coating | |
2 tablespoon(s) granulated sugar | |
1 teaspoon(s) cinnamon |
1. | Preheat the oven to 180* C (350* F) set to fan. |
2. | In a bowl combine the flour, baking powder, and ground cinnamon with a spoon. |
3. | In a mixer’s bowl, add the butter cut into cubes, granulated sugar, brown sugar, and vanilla extract. Beat for 1 minute with the paddle attachment until the mixture becomes light and fluffy. |
4. | Remove the bowl from the mixer and add the egg. |
5. | Mix with a spatula until all of the ingredients are completely combined. |
6. | Knead the cookie dough with your hands. It should be quite soft. |
7. | Cut the dough into 18 pieces with a knife and shape each piece into a ball. Each ball should be about 30 g. |
8. | In a bowl add 2 tablespoons sugar and 1 teaspoon cinnamon. Mix with a spoon. |
9. | Dip all of the dough balls into the bowl with the cinnamon-sugar mixture, only on the one side, and place them on two baking pans that are lined with parchment paper. |
10. | Press the cookies lightly with your hands to spread them a little and bake for 12-15 minutes. |
11. | Allow 20 minutes for the cookies to cool and serve. |
