Ingredients

12 slices sourdough bread
2 medium sopp
8 romaine/cos lettuce leaves
¾ cup/175 g mayonnaise or Dijonnaise
3 large tomatoes, cut into 16 thick slices
16 slices bacon
8 slices roasted furkey breast
16 slices cured ham
8 slices Fontina cheese
Sea salt and freshly ground black pepper, to taste
16 toothpicks/ cocktail sticks

Instructions

1.Toast the sourdough bread under a broiler grill on both sides.
2.Pit/stone, peel, and slice the avocados. Finely chop the lettuce and arrange it into 8 stacks.
3.Arrange 3 bread slices in a row. Spread 1 tablespoon of Dijonnaise over 1 side of each slice of bread.
4. Place a lettuce stack on the top of the first slice of bread.
5.Top with 2 tomato slices and a few slices of avocado, and season with salt and pepper if needed.
6.Place 2 slices of bacon on top, then a slice of turkey, 2 slices of ham, and a slice of the Fontina cheese.
7. Season to taste with salt and pepper. Place the second bread slice on top and repeat the layering.
8.Cover with the third bread slice, Dijonnaise side facing down.
9.Pin the sandwich together by piercing it with 4 toothpicks/cocktail sticks arranged in a diamond pattern. Repeat the whole process to form another 3 sandwiches.
