3 tablespoons tomato ketchup
1 tablespoon Worcestershire sauce
1 teaspoon brandy
1 teaspoon sherry
250 ml/8 fl oz double cream
salt and white pepper


1.Mix together the tomato ketchup, Worcestershire sauce, brandy and sherry in a bowl.
2.Lightly whisk the cream, then gently fold into the other ingredients.
3.Season with a little salt and white pepper. Stir shellfish into this sauce and place in a dish lined with lettuce leaves.
4.For spiny lobster, langoustines, Dublin Bay prawns or shrimp.
