13.5 oz can full fat coconut milk
2 tbsp chia seeds
1 tbsp maple or honey
1 tsp vanilla extract
2 mango, peeled, seed removed


1.Whisk together the coconut milk, chia seeds, maple and vanilla extract in a mixing bowl. Place in the refrigerator for 30 minutes or more.
2.Add the mango to a food processor and pulse several times to make a puree.
3.Fill the molds of a 10-serving popsicle maker by alternating the mango puree and coconut chia mix. Add popsicle sticks and freezer for at least 2 hours.
