120 g/4 oz canned crab meat, drained
2 tablespoons Mayonnaise
juice of 1 lemon, strained
4-6 white bread slices, crusts removed
1 tablespoon chopped fresh flat-leaf parsley
salt and pepper
tiny tomatoes, to garnish


1.Flake the crab meat in a bowl with a fork, then stir in the mayonnaise and season with salt and pepper.
2.Peel, core and finely dice the apple and sprinkle with a little of the lemon juice.
3.Add the apple to the crab meat and stir in the remaining lemon juice.
4.Cut the slices of bread in half and spread with the crab mixture.
5.Sprinkle with the parsley. Store in the refrigerator until ready to serve. 13:
