3 small cucumbers, sliced • 2 pears juice of 1 lemon, strained
200 g/7 oz feta cheese, diced 1 sprig fresh thyme, chopped
4 tablespoonsolive oil 1 tablespoon balsamic vinegar • salt and pepper


1.Blanch the cucumber slices in salted, boiling water for a few minutes, then drain and refresh under cold water. Spread out on a tea towel to dry. Peel and core the pears, then slice thinly and sprinkle with lemon juice.
2.Make a ring of cucumber slices on each of four individual plates. Surround with a ring of pear slices, then another ring of cucumber and, finally, a ring of feta.
3. Sprinkle with the thyme. Whisk together th-e olive oil and vinegar in abowl, season with salt and pepper, pour the dressing over the salad and serve.
