2 cucumbers, peeled
50 g/2 oz cream cheese
dash of lemon juice
1 teaspoon chopped fresh flat-leaf parsley
2 wholemeal loaf, sliced diagonally and crusts removed
salt and pepper


1.Halve 1 cucumber lengthways, then cut into very thin semicircular slices.
2.Place in a colander, sprinkle with salt and leave to drain.
3.Chop the other cucumber and stir it into the cream cheese.
4.Add a dash of lemon juÍce and the parsley and season with salt and pepper,
5.Cut the slices of bread into squares and spread with the mixture.
6.Arrange the cucumber slices on top as if they were fish scales. Serve cold.
