2 cucumbers, peeled and thinly sliced
1 tablespoon chopped fresh dill 1tablespoon lemon juice, strained
1 tablespoon olive oil 20 black olives, stoned and quartered salt


1.Put the cucumber slices in a colander, sprinkle with salt and leave to drain for 30 minutes. Rinse, drain, pat dry and put in a salad bowl.
2.Sprinkle with the dill and drizzle with the lemon juice and olive oil. Add the olives, season with salt if necessary and toss. Leave to stand for a few minutes, then serve.
