Ingredients

Vegetable or canola oil, for frying
4 lb./1.8 kg chicken wings, halved at the joints, tips removed
1 stick/115 g butter
3 cups/750 ml hot sauce
2 tablespoons chopped fresh garlic
3 jalapeño peppers,
2 Thai chilis, deseeded and chopped
3 habanero peppers, deseeded and chopped
2 yellow wax peppers, deseeded and chopped
3 red chilis, pup pepes chopped
Salt and freshly ground black pepper

Instructions

1.Preheat the oil in a deep-fat fryer set to 350°F/180°C and preheat the oven to 400°F/200°C/Gas 6.
2.Fry the wings, 3-4 at a time, turning occasionally, until golden brown.
3.Transfer to a shallow baking dish and bake in the preheated oven for 15 minutes, turning once, or until the juices run clear when the thickest part is pierced to the bone.
4.Melt the butter in a medium saucepan over a medium heat. Stir in the hot sauce, garlic, and peppers.
5.Reduce the heat to medium- low and cook for 15 minutes, or until the peppers have softened.
6.Season to taste with salt and pepper, then pour the sauce over the wings, turning to coat.
7.While the peppers are softening,, make the und Blue Cheese Sauce.
8.Place all the ingredients in a medium bowl and whisk until combined. Reduce the oven temperature to 350°F/ 180°C/Gas 4, return the wings to the oven, and bake for a further 10 minutes.
