1 kg/2 1⁄4lb Italian dandelion, leaves cut into strips olive oil
4 cloves garlic pinch of chilli powder (optional) salt and pepper


1.Cook the dandelion strips in salted, boiling water for 15 minutes, then drainand squeeze out as much liquid as possible.
2.Heat the olive oil in a frying pan, add the garlic and cook over a low heat stirring frequently, until golden brown, then remove and discard.
3.Add the dandelion strips to the pan, increase the heat and cook stirring occasionally, for about 15 minutes. Season to taste with chilli powder, if you like, or pepper.
