
1 kg/2 1⁄4lb Italian dandelion, leaves cut into strips olive oil | |
4 cloves garlic pinch of chilli powder (optional) salt and pepper |
1. | Cook the dandelion strips in salted, boiling water for 15 minutes, then drainand squeeze out as much liquid as possible. |
2. | Heat the olive oil in a frying pan, add the garlic and cook over a low heat stirring frequently, until golden brown, then remove and discard. |
3. | Add the dandelion strips to the pan, increase the heat and cook stirring occasionally, for about 15 minutes. Season to taste with chilli powder, if you like, or pepper. |
