Ingredients

325 g (11 oz) can borlotti beans, rinsed and drained 400 g (13 oz) can butter beans, rinsed and drained
400 g (13 oz) can flageolet beans, rinsed and drained 400 g (13 oz) passata 1 large onion, chopped
2 teaspoons dried Italian herbs 2 teaspoons chopped parsley
1 garlic clove, finely chopped 1 bulb of fennel, trimmed and sliced 2 red or green pepper, cored, deseeded and chopped
a little vegetable oil, for brushing 2 tomatoes, chopped freshly ground black pepper
3 tablespoons grated Parmesan cheese, to serve

Instructions

1.In a large bowl, mix together all the beans, blended tomatoes or passata, onion, herbs, garlic, fennel or celery, peppers and pepper to taste.
2.Brush an ovenproof dish with a little oil. Pour in the bean mixture and top with the chopped tomatoes.
3.Bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 35-40 minutes. Serve sprinkled with Parmesan. Accompany with wild rice, broccoli and steamed carrots and parsnips, if liked.
