100 g/3 1⁄2 oz butter 4 bread slices, crusts removed 1 tablespoon anchovy paste 4 eggs
salt 4 canned anchovy fillets in oil, drained, to garnish


1.Melt 40 g/1 1⁄2oz of the butter in a frying pan, add the bread and fry until golden brown on both sides. Remove from the pan and drain on kitchen paper.
2.Beat 25 g/1 oz of the remaining butter with the anchovy paste in a bowl- and spread the mixture on one side of each fried bread slice.
3.Fry the eggs in the remaining butter and sprinkle a little salt on the whites.
4.Lift out with a fish slice and place one on each slice of fried bread. Garnish withtheanchovy fillets and serve while hot.
