250 g/9 oz button mushrooms
so g/3 oz butter, plus extra for greasing 4 eggs salt and pepper


1.Preheat the oven to 160°C/325°F/Gas Mark 3 and grease 4 individual ovenproof dishes with butter. Remove the mushroom stems (they may be retained and used for asauce) and thinly slice the caps.
2.Melt 50 g/2 oz of the butter in ? frying pan, add the mushrooms and cook, stirring occasionally, for about 10 minutes until lightly browned, then season with salt and pepper to taste.
3.Divide the mushrooms among the prepared dishes and break an egg on top of each.
4.Season the egg whites with a little salt and bake for about 10 minutes until the egg whites have set. Serve immediately in the same dishes.
