50 g/2 oz butter, plus extra for greasing
4 thick slices ready-made or home-cooked set polenta
4 eggs salt


1.Preheat the oven to 160°C/325°F/Gas Mark 3. Grease an ovenproof dish with butter. Melt 40g/1 1/2 oz of the butter in a frying pan, add the polenta slices and cook over a medium heat until golden brown on both sides.
2.Drain on kitchen paper and arrange in the prepared dish. Break an egg on top of each slice, season with salt and dot with the remaining butter.
3.Bake until the egg whites have set and serve immediately.
