50 g/2 oz butter 8 eggs
50 g/ 2 oz black truffle salt and pepper


1.Melt the butter in a frying pan.
2.When frothy, but not brown, break in the eggs and mix together.
3.Season with salt and pepper and cook over S a medium heat for 5-6 minutes.
4.Transfer to a warm serving dish, shave the black truffle over the top and serve immediately.
