1⁄2 avocado, peeled, stoned and sliced juice of1⁄2 lemon, strained
25 g/1 oz butter 150 g/5 oz cooked ham, diced
1⁄2 pineapple, peeled, cored and diced
600 g/1 lb 5 oz canned beans, drained and rinsed 2 teaspoons mild or medium mustard • salt


1.Sprinkle the avocado with the lemon juice to prevent it going brown.
2.Melt the butter in apan, add the ham, pineapple and beans and mix gently. Season lightly with salt and cook over a medium heat for afew minutes.
3.Mix the mustard with 1-2 tablespoons of the cooking juices in a small bowl and stir into the pan. Add the avocado, cook for a few minutes more and serve.
