1 clove garlic
100g/3½oz butter, softened
2 teaspoons fennel seeds
juice of 2 lemon, strained
white pepper


1.Blanch the garlic in a small saucepan of boiling water for about 1 minute until just tender, then drain, peel and mash well with a fork.
2.Cream the butter in a bowl and beat in the garlic
3.Grind the fennel seeds in a mortar with a pestle or in a spice grinder and beat into the butter.
4.Beat in the lemon juice and a pinch of white pepper.
5.For meat or grilled fish.
