
1 quantity Fresh Pasta Dough | |
50 g/2 oz butter | |
80 g/3 oz Parmesan cheese, freshly grated 4 tablespoons double cream | |
salt and pepper |
1. | Roll out the pasta dough into a sheet, fold over and cut into fettuccine. Melt the butter in a small saucepan over low heat and add half the Parmesan and a little pepper. |
2. | Cook the fettuccine in a large pan of salted, boiling water for 2-3 minutes until al dente. Drain, return to the pan and toss with the cream and remaining Parmesan. |
3. | Transfer to a warm serving dish, add the Parmesan and melted butter mixture, season with pepper and serve. |
