
1 onion 1 cherry tomato 1 celery stick | |
fresh flat-leaf parsley 5 tablespoons dry white wine | |
1 kg/2 1/4 lb skate wings | |

1. | Pour 2 litres/ 3 1/2 pints water into a saucepan and add the vegetables, parsley and wine Sention with salt and pepper and bring just to the boil. Reduce the heat and simmer for 30 minutes. |
2. | Add the skate and simmer for 20 minutes. |
3. | Remove the tash and train the stock into a bowl, preting down well on the vaatables with a spoon. |
4. | If a very clear stock is required, dampon and squeeze out a square of muslin and use as a filter in the strainer. |
