1 onion 1 cherry tomato 1 celery stick
fresh flat-leaf parsley 5 tablespoons dry white wine
1 kg/2 1/4 lb skate wings
salt and pepper


1.Pour 2 litres/ 3 1/2 pints water into a saucepan and add the vegetables, parsley and wine Sention with salt and pepper and bring just to the boil. Reduce the heat and simmer for 30 minutes.
2.Add the skate and simmer for 20 minutes.
3.Remove the tash and train the stock into a bowl, preting down well on the vaatables with a spoon.
4.If a very clear stock is required, dampon and squeeze out a square of muslin and use as a filter in the strainer.
