
Olive oil, for brushing and drizzling 4 salted anchovies, heads removed, cleaned and filleted, soaked incold water for 10 minutes and drained | |
100 g/3 1/2 oz mussels, scrubbed and beards removed | |
1 quantity Pizza Dough | |
plain flour, for dusting 4 tomatoes, peeled and chopped | |
50 g/2 oz green olives 50 g/2 oz cooked ham, diced | |
50 g/2 oz mozzarella cheese, diced 4 baby artichokes in oil, drained and halved | |
50 g/2 oz black olives salt and pepper |
1. | Preheat the oven to 220°C/425°F/Gas Mark 7. Brush a baking sheet with oil or line with baking parchment. Cut the anchovy fillets in half lengthways. |
2. | Discard any mussels with broken shells or that do not shut immediately when sharply tapped. Place in a dry frying pan and set over a high heat for 5 minutes until they open. Discard any that remain closed. |
3. | Remove the mussels from their shells. Roll out the dough on a lightly floured surface, then press it out on the baking sheet. Scatter the tomatoes on top and mark out a cross using the back of a knife. |
4. | Arrange the anchovy fillets and green olives in one quarter, the mussels in another, the ham and mozzarella in the third, and the artichokes and black olives in the fourth. |
5. | Season with salt and pepper, drizzle with oil and bake for 15-20 minutes. |
