Olive oil, for brushing and drizzling 4 salted anchovies, heads removed, cleaned and filleted, soaked incold water for 10 minutes and drained
100 g/3 1/2 oz mussels, scrubbed and beards removed
1 quantity Pizza Dough
plain flour, for dusting 4 tomatoes, peeled and chopped
50 g/2 oz green olives 50 g/2 oz cooked ham, diced
50 g/2 oz mozzarella cheese, diced 4 baby artichokes in oil, drained and halved
50 g/2 oz black olives salt and pepper


1.Preheat the oven to 220°C/425°F/Gas Mark 7. Brush a baking sheet with oil or line with baking parchment. Cut the anchovy fillets in half lengthways.
2.Discard any mussels with broken shells or that do not shut immediately when sharply tapped. Place in a dry frying pan and set over a high heat for 5 minutes until they open. Discard any that remain closed.
3.Remove the mussels from their shells. Roll out the dough on a lightly floured surface, then press it out on the baking sheet. Scatter the tomatoes on top and mark out a cross using the back of a knife.
4.Arrange the anchovy fillets and green olives in one quarter, the mussels in another, the ham and mozzarella in the third, and the artichokes and black olives in the fourth.
5.Season with salt and pepper, drizzle with oil and bake for 15-20 minutes.
