butter, plus extra for greasing 8 fresh basil leaves, chopped
pinch of dried oregano 4 plum tomatoes, thinly sliced 4 eggs salt and pepper


1.Preheat the oven to 180°C/350°F/Gas Mark 4. Grease four ramekins with plenty of butter, sprinkle with half the basil and the oregano, add afew slices of tomato and break an egg into each.
2.Season lightly with salt and pepper and dot with butter, then top with the remaining tomato slices and basil.
3.Place the ramekins in a roasting tin, add boiling water to come about halfway up the sides and bake for 6-8 minutes or until the egg whites are lightly set.
4.Alternatively, place the roasting tin over a low heat on the hob for 6-8 minutes.
