
butter, plus extra for greasing 8 fresh basil leaves, chopped | |
pinch of dried oregano 4 plum tomatoes, thinly sliced 4 eggs salt and pepper |
1. | Preheat the oven to 180°C/350°F/Gas Mark 4. Grease four ramekins with plenty of butter, sprinkle with half the basil and the oregano, add afew slices of tomato and break an egg into each. |
2. | Season lightly with salt and pepper and dot with butter, then top with the remaining tomato slices and basil. |
3. | Place the ramekins in a roasting tin, add boiling water to come about halfway up the sides and bake for 6-8 minutes or until the egg whites are lightly set. |
4. | Alternatively, place the roasting tin over a low heat on the hob for 6-8 minutes. |
