600 g/1 lb 5 oz green and yellow French beans, trimmed 1 onion, thinly sliced
1 clove garlic, thinly sliced 1 teaspoon mustard seeds juice of 1⁄2 lemon, strained
1 sprig fresh flat-leaf parsley, chopped olive oil, for drizzling • salt and pepper


1.Cook the beans in salted, boiling water for 15 minutes, then drain and tip into a salad bowl.
2.Add the onion, garlic, mustard seeds, lemon juice and parsley, drizzle with olive oil and seasonwithsalt and pepper.
3. Toss and set aside in a cool place for 30 minutesfor the flavours to mingle before serving.
