butter, for greasing • 800 g/1 3⁄4 lb French or runner beans, trimmed
eggs • 5 tablespoons milk
100 g/3 1⁄2 oz Parmesan cheese , freshly grated salt and pepper


1.Preheat the oven to 180°C/350°F/Gas Mark 4. Grease an ovenproof dish with butter. Cook the beans in salted, boiling water for 15 minutes, then drain and place in the prepared dish.
2.Beat the eggs with the milk and Parmesan and season with salt andpepper. Pour the egg mixture over the beans and bake until just set. Serve immediately.
