2 large onions. cut into thick rings vegetable oil. for deep-frying
salt and white pepper
For the batter 3 tablespoons plain flour 1 egg 3 tablespoons olive oil salt and pepper


1.To make the batter, sift the flour and apinch of salt into a bowl , make a well in the centre, break the egg into the well and add the olive oil and a pinch of pepper.
2.Mix well until the batter is smooth and even. Leave to rest for 1 hour. Meanwhile, put the onion rings in a dish, add cold water to cover and set aside for about 30 minutes.
3.Drain and pat dry with kitchen paper. Heat the vegetable oil inalarge pan. Dip the onion rings in the batter and fry, in batches, in the hot oil until golden brown.
4.Remove with a fish slice, drain on kitchen paper and sprinkle with salt and pepper. Serve immediately.
