50 g/2 oz butter 1 onion, thinly sliced
350 g/12 oz penne 40 g/1 1/2 oz Parmesan cheese, freshly grated
salt and pepper


1.Melt the butter in a pan, add the onion, then add the penne. Mix well to coat the pasta with butter, then pour in enough boiling water to cover.
2.Add sail and cook until the pasta is al dente, adding more boiling water if necessary.
3.Season with pepper, transfer to a warm serving dish and sprinkle with the Parmesan.
