1 egg, lightly beaten • salt


1.Heat the vegetable oil in a large pan. Meanwhile, put the flour in a plastic bag, add the porcini, in batches, and shake to coat, then remove the porcini and dip them in the beaten egg.
2.Deep-fry, in batches, in the hot oil until golden brown. Remove with a fish slice, drain on kitchen paper and transfer to a warm serving dish. Sprinkle with salt and serve immediately.
