120 g butter, at room temperature
120 g granulated sugar
100 g dark brown soft sugar
1 egg, medium
1 teaspoon(s) vanilla extract
120 g all-purpose flour
1 teaspoon(s) baking soda
lemon zest, of 1 lemon
50 g dates, dried, pitted
30 g raisins, golden
30 g peanuts, salted
120 g granola


1.Preheat the oven to 180ο C (350ο F) set to fan.
2.In a bowl add the butter, granulated sugar, dark brown sugar, and mix with your hands by wearing gloves, until the butter softens.
3.Add the egg, the vanilla extract, and keep mixing until the mixture is homogenized.
4.In a bowl add the flour, baking soda, salt, lemon zest, and mix.
5.Add the solid ingredients into the bowl with the mixture.
6.Finely chop the dates, raisins, peanuts, and add them to the bowl along with the granola.
7.Mix and shape round cookies of 40 g each.
8.Place the cookies on two baking sheets lined with parchment paper, and bake them in the oven for 12-15 minutes. The cookies will spread while baking.
9.Remove the baking sheets from the oven, set them onto a rack so that the cookies will cool completely, and serve.
